Ingredients
• 6 large shrimp – peeled, deveined and chopped
• 1 cup dry bread crumbs
• 1 (6 oz.) can crabmeat, drained
• 1 jalapeno pepper, seeded and minced
• 1 cup shredded pepperjack cheese
• 1/2 cup shredded Cheddar cheese
• 1/2 cup olive oil
• garlic salt to taste
• 40 large shrimp – peeled, deveined and butterflied
• 20 thick slices bacon, cut in half
• toothpicks
Direction
• Combine garlic salt, olive oil, Cheddar cheese, pepper jack cheese, jalapeno
pepper, crabmeat, bread crumbs, and 6 chopped shrimp in a medium bowl.
You can test with the amounts of crab and shrimp, just make sure the mixture
holds together firmly once squeezed in your hand.
• Prepare the oven’s broiler by preheating.
• On a clean work surface, lay the bacon strips. Press a small handful of the
crab mixture tightly. Fill it into a butterflied shrimp, then use bacon to wrap
it. Seal with two toothpicks – it holds better if you form an X with the
toothpicks. Transfer the shrimp on a roasting pan or cookie sheet.
• Then broil shrimp for about 10 minutes, or until the bacon is crisped, then
flip and broil on the second side.
