Ingredients
• 4 lbs. medium shrimp – peeled and deveined
• 1/2 cup corn oil
• 1/2 cup all-purpose flour
• 1 cup chicken broth
• 1 (3 lb.) whole chicken
• 2 onions, chopped
• 5 stalks celery, chopped
• 1 green bell pepper, chopped
• 5 large tomatoes, chopped
• 4 cloves garlic, minced
• 2 bay leaves
• 1 tbsp. salt
• 2 tbsps. Old Bay Seasoning TM
• 1 tbsp. ground cayenne pepper
• 3 (6 oz.) cans crab meat, drained
• 1 lb. andouille sausage, diced
• 2 tbsps. file powder
Direction
• Skin and devein the shrimp. Keep the shrimp meat in the refrigerator. In a
large pot, place the shrimp heads and shells, then add 2 quarts of water to
cover. Cover, and simmer on medium-low heat until liquid is lessened by
half. Drain out the shrimp heads and shells.
• Choose a large stockpot that can hold all the ingredients. Then place oil to
the pot, and set on medium-high heat. Add in flour and stir using a long
handle spoon; stir and cook for several minutes until dark brown. At that
point, the flour instantly puffs up and absorbs the oil. Gradually mix in an
equal amount of water and chicken broth. Add chicken in the pot. Add salt,
Old Bay seasoning, red pepper flakes, bay leaves, garlic, tomatoes, bell
pepper, celery, and onions. Boil for approximately 1 1/2 hours, or until
chicken meat is not pink anymore and the juices run clear.
• Take the chicken from the pot, and reserve until cool enough to handle.
Take off the bones, and chop the chicken into about one-inch portions.
• Add shrimp, sausage, crab meat, shrimp broth, and chicken meat. Put in the
file powder, and mix from the bottom of the pot. Once the gumbo comes to a
boil, separate from heat. Keep on stirring from the bottom for 1 minute.
