Broccoli and Blue Cheese Mash

Prep time: 10 minutes

Cook time: 1 hour

Serving: 4 people


1 head of broccoli, florets only

2 tbsp butter

1/4 cup heavy cream

1/2 cup blue cheese crumbles

Salt and pepper to taste


Preheat your sous vide machine to 185°F (85°C).

Blanch the broccoli florets in boiling water for 2 minutes, then immediately transfer to an ice bath to stop the cooking process.

After draining, dry the broccoli with a paper towel.

Put the blue cheese crumbles, heavy cream, butter, and broccoli florets in a sous vide bag.

Remove as much air as you can before closing the bag.

Cook the bag in the sous vide device for an hour.

Take the bag out of the sous vide machine and the broccoli florets out after one hour.

To make a smooth puree, add the sauce and broccoli florets to a food processor or blender.

Add salt and pepper to taste to the broccoli and blue cheese mash.

Give your favorite main entrée a side of the broccoli and blue cheese mash.
