Cherry Chicken Bites

Serving: 4-6 people

Ingredients:

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup fresh cherries, pitted and chopped

1/4 cup balsamic vinegar

2 tbsp honey

1 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper Skewers (if desired)

Directions:

Preheat your sous vide machine to 145°F (63°C). In a mixing bowl, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper until fully combined.

Add the chicken pieces to the bowl and toss to coat evenly in the marinade. Seal the chicken and marinade mixture in a sous vide bag, removing as much air as possible before sealing.

Place the bag in the sous vide machine and cook for 2 hours. Prepare the cherry glaze while the chicken is cooking.

Cherry slices and 1/4 cup water are combined in a small pot over medium heat.

Simmer for 10 minutes or until the cherries are soft and the mixture is syrupy.

As soon as the chicken is done cooking, remove the cherry glaze from the heat and set it aside. After the chicken is done cooking, take it out of the sous vide bag and, if preferred, thread the chicken pieces onto skewers.

Save some cherry glaze for dipping and brush it on the chicken skewers. Over medium-high heat, preheat a grill or grill pan.

The chicken skewers should be grilled for two to three minutes on each side for beautiful caramelization.

With the leftover cherry glaze available on the side for dipping, serve the cherry chicken bits hot.
