Bell Peppers with Cauliflower

Servings: 4

Ingredients:

4 bell peppers, halved and seeded

2 cups cauliflower florets

1 cup grated cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup heavy cream

2 tablespoons olive oil

1 tablespoon dried oregano

Salt and pepper, to taste

Directions:

Preheat the sous vide water bath to 180°F (82°C).

In a mixing bowl, combine the cauliflower florets, grated cheddar cheese, grated Parmesan cheese, heavy cream, olive oil, dried oregano, salt, and pepper.

Mix the ingredients until well combined. Stuff each bell pepper half with the cauliflower-cheese mixture.

Transfer the stuffed bell peppers to a sous vide bag and seal it. Cook the bag for 1 hour and 30 minutes in the hot water bath.

Take the bag out of the water bath after one and a half hours and let it cool.

To place the filled bell peppers in a serving dish, open the package.

As a main meal or side dish, serve the Cheesy Bell Peppers with Cauliflower warm.
